In Ausseerland, customs are lived and celebrated with passion. Right after carnival and the traditional carnival parades, Lent starts on Ash Wednesday. A typical Lenten food from Ausseerland is the Beigel, a salty, ring-shaped pretzel pastry.
Ingredients:
- 380 g wheat flour type 700
- 120 g rye flour
- 1 package of dry yeast
- 1 tablespoon caraway
- 1 tablespoon salt
- 1 tablespoon oil
- 375 ml lukewarm water
Here's how it works: mix all the dry ingredients, add oil and water, knead well and form beigel. Put the beigel in boiling salted water until they come to the surface. Then place on a greased baking sheet and bake at 200 to 210 degrees Celsius (top and bottom heat) for 20 to 25 minutes. Immediately after baking, brush with water and salt.
